Golden Cinnabun Cookies

The ultimate christmassy feel & a deliciously crumbly bite. These golden cinnamon bun cookies are the perfect superfood companion in every cookie jar.

Ingredients:

For the dough:

  • 180 g flour
  • 80 g sugar
  • 1/2 tsp baking powder
  • 60 g butter
  • 1 egg yolk
  • 1 pinch of salt
  • 50 g crème fraiche or Greek yoghurt

 

For the filling:

  • 1 1/2 tbsp Golden Sahara
  • 50 g brown sugar
  • 50 g melted butter

 

Method:

1. In a medium bowl, whisk together the flour, baking powder, sugar and salt.
2. Cut the butter into small pieces and add to the flour mix. Then add the egg yolk and crème fraîche and knead everything into a dough. Either with your hands or with an electric mixer will work well. 
3. Place the dough in the fridge for an hour.
4. Melt the butter and mix with the brown sugar and Golden Sahara in a small bowl.
5. Remove the dough from the fridge and roll out into a rectangle (approx. 30 x 30 cm) on baking paper using a floured rolling pin.
6. Spread the Golden Sahara filling evenly over the dough and then roll the dough tightly into a roll using the baking paper.
7. Chill the dough roll for another hour.
8. Preheat the oven to 160 degrees (top/bottom) heat.
9. Remove the dough roll from the baking paper and cut into slices (approx. 7 mm thick).
10. Place the individual cookies on the baking tray and bake for about 10-12 minutes, depending on how soft or crispy you like them.
