Whether for breakfast or afternoon coffee, with fruit, cream or chocolate sauce, this banana bread is as versatile as its ingredients.
Ingredients:
- 2 tbsps Cocoa Breeze
- 20 g cocoa powder
- 140 g flour
- 180 g sugar
- ¾ tsp baking powder
- 1 pinch of salt
- 3 ripe bananas (should yield approx. 350 g)
- 120 g Greek yogurt
- 2 eggs
- 1 sachet of vanilla sugar
- 40 ml canola or sunflower oil
- 150 g chocolate chips
Method:
1. Preheat the oven to 175 degrees.
2. Lightly grease a loaf pan with butter.
3. In a large bowl, whisk together the Cocoa Breeze, cocoa powder, flour, baking powder, salt and sugar.
4. In a medium bowl, mash the bananas and stir them together with the Greek yoghurt, eggs, vanilla sugar and canola oil.
5. Gently fold the banana mixture into the flour mixture until everything is well combined (do not overmix).
6. Carefully fold in the chocolate chips and pour the batter into the loaf pan.
7. bake the banana bread for 60-65 minutes. The banana bread is ready when you pierce it with a wooden skewer and no liquid remains.
8. Cut the banana bread into even slices and serve with fruit or chocolate sauce.
